The Ingredients

The beauty of this dish lies in its simplicity. Here's what you'll need:

  • 1 medium head of cauliflower, riced (you can buy this pre-riced in the frozen food section)
  • 1 cup of mixed bell peppers, diced
  • 1/2 cup of broccoli florets
  • 2 tablespoons of coconut oil
  • 2 cloves of garlic, minced
  • Soy sauce or tamari to taste

    The Preparation

    1. Rice the cauliflower (or buy it pre-riced). You can do this by pulsing the florets in a food processor until they resemble the texture of rice. Alternatively, you can use a box grater to achieve the same result.

    2 Heat the coconut oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the minced garlic and sauté for about a minute.

    3. Add the riced cauliflower, diced bell peppers, and broccoli florets to the pan. Stir-fry the vegetables for 5-7 minutes, or until they're tender-crisp.

    4. Season the stir-fry with soy sauce or tamari to taste.
