Ingredients
- 1 lb ground beef
- 2 tbsp olive oil or butter
- 1/2 medium onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes (no added sugar)
- 1/2 cup heavy cream
- 1 tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1/4 cup shredded cheddar cheese
Instructions
1. In a large pot, heat olive oil or butter over medium heat.
2. Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Remove excess grease if necessary.
3. Add the chopped onion, bell pepper, and garlic to the pot. Cook for another 3-4 minutes until vegetables are softened.
4. Stir in the tomato paste, basil, oregano, smoked paprika, salt, and pepper. Cook for 1-2 minutes to let the flavors combine.
5. Pour in the beef broth and diced tomatoes an stir. Bring to a boil, then reduce heat to low. Simmer for 10-15 minutes to let the flavours meld.
6. Stir in the heavy cream and chopped kale or spinach (if using). Simmer for another 2-3 minutes until greens are wilted.
7. Ladle into bowls and top with shredded cheddar cheese
