This dish is the ideal blend of creamy, cheesy goodness that will satisfy your comfort food cravings without derailing your keto progress. Cauliflower, the versatile low-carb vegetable, is the star of the show, providing a nutrient-dense base for the rich and indulgent flavor.

This cheesy cauliflower casserole pairs perfectly with grilled or roasted meats either added to or served on the side.

Ingredients:

1 large head of cauliflower, chopped

1 cup shredded cheddar cheese

½ cup cream cheese, softened

½ cup sour cream

½ cup grated Parmesan cheese

Salt and pepper to taste1 large head of cauliflower, chopped

How to prepare:

1. Preheat your oven to 375°F (190°C).

2. Boil the chopped cauliflower until it's tender, about 8-10 minutes.

3. Drain the cauliflower and mash it up in a bowl.

4. Add the shredded cheddar cheese, cream cheese, sour cream, parmesan cheese, salt, and pepper to the mashed cauliflower.

5. Mix everything together until it's well combined and creamy.

Baking and Serving

Grease a baking dish and spread the cauliflower mixture into it. Bake the casserole for 25 minutes, or until it's golden and bubbly on top.

Once it's out of the oven, let it cool for a few minutes before serving.
